This collection of six vintage wooden cabbage cutters and vegetable slicers offers a fascinating glimpse into early American kitchen utility and craftsmanship. Featuring pieces from renowned manufacturers like Tucker & Dorsey Mfg. Co. and Catawissa Specialty Mfg. Co., the lot showcases a diverse array of designs ranging from simple single-blade boards to complex multi-blade units with integrated sliding safety boxes. These tools, often called "mandolines" or "slaw cutters," were indispensable for preparing traditional staples like sauerkraut and "Saratoga chips" (early potato chips). The inclusion of a Catawissa slicer with its original paper label still partially intact provides a rare and valuable provenance for collectors of kitchenalia.
The craftsmanship is evident in the variety of woods and construction methods used across the six pieces. Several cutters feature adjustable blades and side-mounted hardware, such as wing nuts, allowing for precise control over slicing thickness. The sizes are substantial, with the larger boards measuring approximately 16 to 18 inches in length, while specialized serrated shredders offer a different textural utility. Notable details include the distinct "Tucker & Dorsey" branding and the classic dovetailed or nailed wooden boxes designed to hold vegetables in place during rapid use, highlighting the evolution of kitchen safety and efficiency during the late 19th and early 20th centuries.
Condition-wise, these pieces display a beautiful, authentic patina that only comes from decades of history. While showing expected signs of age—including oxidation on the metal blades, minor wood staining, and surface wear—the structural integrity of the boards remains impressive. These are ideal as rustic decorative accents for a farmhouse-style kitchen, or as significant additions to a collection of primitive Americana. This versatile lot represents a comprehensive cross-section of domestic manufacturing history, from the "most efficient and satisfactory vegetable slicer on the market" in Catawissa to the sturdy, industrial-grade outputs of Indianapolis-based Tucker & Dorsey
